This little lady right here is my entire heart and soul wrapped up in her little 39 pound body! She is truly the most amazing thing to ever happen to me. The two of us have been through hell and back together.

For a short brief back story. Fally was born with a rare genetic disorder called Ehlers Danlos Syndrome. Without going into too much detail, it's a connective tissue disorder affecting the collagen production in her body which deeply affects her joints and blood vessels. (for more info feel free to check out her awareness page www.facebook.com/FootstepsforFally ).  It's been a long long road fighting to find someone, anyone who could treat her. We have traveled all across the country only to end up leaving Upstate NY and moving to southern Texas to a place where she is getting the most AMAZING therapy services a person could possibly get!  We had a set back in her progress the day after thanksgiving last year (2012) when we were out for the lighting of the Christmas lights on the Riverwalk in San Antonio when she suffered a minor stroke at the very tender age of barely 3 years old. However, she fought back and has kicked ass along the way. I digress because that's not what I'm writing about today. She is severely motor skill delayed due to her disease. In fact we were told when she was an infant that she would never walk, never run, never jump, never dance and just never really do most things that the average healthy child/person would be able to do.  She had been dealt a life of leg braces (AFOs) and wheelchairs. We had to carry her everywhere even at 3 years old because walking was hard, after a few too many steps she was exhausted and in pain. It was just so hard to watch her struggle.

My anxiety from all of this comes because 6 months ago she had another standard physical therapy evaluation where they measure and score her motor skills (we will go through this same process again for occupational therapy, speech and feeding therapy). 6 months ago my little girl was in a wheelchair, leg braces barely moving much other than toddling around the house or wherever we were for a few steps. She was scored by the medical community at the age of 3 and a half years old as having the gross motor skills (walking jumping etc) of 14 month old baby. The taller she got, the heavier she got, the harder for her it was to get around and the more pain it caused her joints. Her development pediatrician and genetics physician as well as her regular pediatrician didn't seem too optimistic that she would really ever progress very well as most children with EDS tend to digress as their joints deteriorate or have chronic pain. Well her new Physicial therapist (fally's 3rd) saw something in fally that made her think, no this isn't it for her. She is one determined and motivated little child. She has so much more in her. So we set a long hard schedule of therapy every single day, some days twice a day plus working with her at home. It was a lot of tantrums, a lot of tears, a lot of days where fally just wanted to go to sleep she was so tired.  An adult would buckle under her work out schedule. The goal was to build muscle! yeah you heard that right BUILD MUSCLE in a 3 year old child who has hypotonia (severe low muscle tone very loose and floppy). Well tomorrow is the end of 6 months. Tomorrow is Fally's re-evaluation and scoring to see where she is today. I'm so anxious to see where they put her on the age charts for motor skills. She still is behind other 4 year olds. Very behind in fact. However, fally is no longer in a wheelchair, she has graduated from leg braces to SMOs (just ankle brace which she will always need) and........................... that little girl that all of those doctors told us would never dance..... takes a dance class both tap and ballet every Tuesday!! In fact she had a dance recital on fathers day weekend. Yes she was much more behind than the other girls, she couldn't do most of the leg work but she went through the motions, gave it her all and was so very proud of herself. That is all I could ask for. So here I sit, anxious to see how far my little warrior has come in the last 6 months.

I am the ultimate homebody when it comes to working out! I get so intimidated by all of those hard bodies and hard core fitness gurus out there that I feel so out of place and embarrassed in a gym. So In my pursuits to get more fit and work out, Oddly, I like to get in shape IN ORDER to go to the gym. I know it's a twisted way of thinking but I really don't want to be judged when I go to a gym and we all know that many of those skinny buff broads will all be like "oh my god look at her huge ass, or Oh my good look at her sweating. I think she might be having a heart attack" Nooo skinny, I'm not having a heart attack I just happen to get really red in the face whether i'm a size 2o or a size 2.

I know I shouldn't think this way but really I just can't help it. I have this fear of people mocking my fatness. So for those of us who either do not have time in our busy day to travel to a gym, we can't afford a gym membership or you suffer from the same ill fate as I.............Here are your great crossfit at home work outs that will really get that heart pumping in a short time and get you on your path to buff you!

Ingredients

2 pounds
pork or  beef ribs
2 tablespoons sesame oil
1/2 teaspoon crushed chilies
1 teaspoon ground black pepper
1/2 cup coconut aminos (or soy
sauce)
3  cloves garlic, minced
3 green onions, minced
2 teaspoons
fresh ginger,  ground
2 teaspoons fish sauce (I HATE Fish sauce so I personally do not use it)
1 teaspoon rice
vinegar
1/4 cup cilantro,  chopped

Directions


Stove
Top or Grill Method


Fill a large pot
with  water and bring to a boil. Once boiling, add the ribs to the water. Reduce
the  heat and boil for 20 minutes or until the ribs are just cooked
  through.

Remove the ribs
from  the water and place onto a foil lined roast pan. Preheat the grill or
broiler in  the oven.

In a small bowl,
  combine the remaining ingredients. Pour the mixture over the ribs making
sure to  coat all sides evenly.

Grill or broil for
3  to 4 minutes, watching constantly so they do not burn. Flip the ribs, brush
with  sauce and broil for another 3 to 4 minutes.

Serve warm with
  additional sauce for dipping.
 


Slow Cooker  Method

In a
small  bowl, combine the marinade ingredients. Pour the mixture over the
ribs making  sure to coat all sides evenly.

 
Arrange the ribs
in  the slow cooker and pour the sauce over top. Cover and cook on low for 6 to
8  hours.
 
Remove the ribs
from  the slow cooker and place onto a foil lined roast pan. Preheat the broiler
in  the oven. Broil the ribs for 3 to 4 minutes, watching constantly so they do
not  burn. Flip the ribs, brush with sauce and broil for another 3 to 4
  minutes.

Ingredients:
4 boneless, skinless chickenn breasts
salt
and fresh  ground black pepper for seasoning chicken
1/2 cup basil pesto (I
used my  homemade Basil  Pesto with Lemon, but you can use
purchased pesto.)
2 oz. (1/2 cup)  grated low-fat mozzarella cheese (I personally Omit the cheese because I avoid dairy)


Instructions:
Preheat oven to
  375F/190C. Trim all visible fat and tendons from chicken pieces, then cut each
  chicken breast lengthwise into 2 or 3 pieces. (I cut the larger ones into 3
  strips and the smaller ones into 2 strips.)

Spray a 9" x 12" (or 8.5" X 12.5") baking dish
  with non-stick spray, then spread 1/4 cup basil pesto over the bottom of the
  dish. Lay chicken strips over the pesto, then spread 1/4 cup more basil pesto
  over the chicken.

Cover the baking dish with aluminum foil (or
  use a baking dish with a tight-fitting lid) and bake the chicken for 25-30
  minutes, just until chicken is barely firm and cooked through. (Don't cook too
  much at this point, or the chicken will be overcooked by the time the cheese is
  melted and browned.)

When chicken is barely cooked through, remove foil
  and sprinkle chicken with 1/2 cup grated mozzarella cheese. Put dish back into
  the oven without foil and cook 5 minutes more, just until cheese is melted. (If
  your broiler is separate from the oven, start preheating it when you take the
  chicken out.) After I melted the cheese for 5 minutes I switched my oven to
  broil and broiled for 5 minutes more, just long enough to get the cheese
lightly  browned.

Serve hot. There will be some flavorful juice in the
bottom of  the dish when this is done, so you may want to serve with rice,
couscous, or  quinoa to soak up the juice, but if you're eating this for phase
one, just spoon  the juice over the chicken.

Here is an amazing Low calorie, delicious and dairy free

So first you need to get yourself an air tight container such as a mason jar. You want to mix up yourself your very own dry ranch dressing mix. AND this is ALL That you need to do that to create amazing Ranch variations of our best dishes!!

NOW A SIDE NOTE: ALL THINGS PALEO YOU MAY WANT TO SUB YOUR Mayonnaise for an Avocado oil preparation so that it best suits your needs!

Dry Ranch Mix (this makes far more than you need so store it in an air tight container. It is AMAZE-BALLS on chicken or sprinkled on veg before you roast them):
Black Pepper ¼ cup
Parsley
Flakes 1 1/2 cup
Garlic
Salt ½ cup
Salt- 2 teaspoons
Granulated
Garlic ¼ cup
Granulated
Onion 3/4 cup
Dill
Weed 2 Tablespoons

SO now that we got that out of the way, those of you who DO NOT Follow any of the nutritional guidelines that I have previously mentioned you can make substitutions (you can use regular milk, you can use one dry packet of hidden valley ranch mix while it will still taste great it will be higher in calories, fat and carbs. I also find that with using coconut milk, the dressing is wonderfuly creamy)

the recipe for the amazing Cilantro Jalapeno Ranch Dressing is as follows:
1 cup of Unsweetened Coconut Milk
1 Cup of Light Mayonnaise (hellman's IS the best!)
3/4 cups of chopped fresh cilantro
3 whole jalapeno peppers that have been diced
2 tablespoons of your dry ranch mix.

TAKE ALL of these fantastic ingredients and put them into an immersion blender, regular blender or I personally used my NINJA

simply blend and voila!!!!!!!!!!!!!!!!!! I even took the time to calculate the nutritional info. One serving is 2 tablespoons. (be sure to let chill overnight or at least a few hours to let the flavors meld. For more heat, you can add an extra jalapeno. I like a kick but not where I'm from a tongue inferno.

My husband and I had such great success with the Five Day Fat Flush this round that we are stoked about doing it again this week! Here are the essentials to a Frappe Protein Smoothie. Now mind you that I had to make it twice because the first time would have made you bounce off the walls all day in a coffee induced ADD fit.  This is SOOOOO GOOD, my husband and I drank enough for 4 people. Eh not so great when you are trying to lose weight but darn it we just couldn't pass it up. Next time, I shall make less but on the upside on a lazy Sunday morning, my husband is just ready to rock and roll like woohooo let's clean house. Let's go run errands, go have a lunch date! Normally it's like dragging a teenager out of bed early in the morning to go to school. Alas, I found his kryptonite, it makes him weak, too weak to resist!!


Note: This makes enough for 2 people so if you need a single serving then simply cut recipe in half
Ingredients:
2 scoops of Chocolate Toppfast Protein Mix
1 tbsp of blue agave
2 cups of almond milk/Coconut milk *would be sooo creamy*
20 ice cubes
2 heaping teaspoons of Instant coffee
1 tsp of cocoa powder

Adjustments: if you are NOT dairy free or paleo then feel free to add some greek yogurt of extra creaminess or some splenda/stevia/sugar for your sweetener. 

Just toss it all in your blender or ninja (god I love this thing) and BLEND!! amazingness in 30 seconds or less! now if you aren't dairy free you can grab some whipped cream for the top sprinkle a little cocoa and straw. Voila! kick start your day with less guilt

I completely and utterly splurged on myself the other day. Something that I never do as I tend to get a lot of guilt. I often think, man I could use that money on xyz for the house or the family etc. Perhaps that is just the mommy in me or simple the frugile side of me. I am a saver, I love to save and plan. However, not this week! I decided, I work hard for my family,  I'm working hard to get healthy and beat this auto-immune disease and get back into shape so alas I bought myself a NINJA! Holy moly batman is this thing brilliant. I could live on a liquid diet for the rest of my life.
Soooooo speaking of Ninja, my amazing pumpkin smoothie was brilliantly delicious! My husband and I loved it so much we are planning our next attack~ A "frozen coffee" smoothie for tomorrow~ Stay tuned for that awesomeness~
 
The recipe is quite simple and you may have everything you need at home. Note: My recipe makes enough for 2 people simply cut in half to make a single serving

2 cups Coconut Milk (you may use almond, soy, hemp or regular milk if you prefer)
15-20 ice cubes
1 tbsp Blue Agave (you can sub for stevia or whichever sweetener you prefer)
1 tsp cinnamon
1 tsp pumpkin spice
1/2 tsp ground ginger (you can grate fresh)
1.5 cups of pumpkin puree
2 scoops of Vanilla ToppFast Protein shake mix (available at http://www.facebook.com/Thepatrioticpeacock)

Simply toss it all in your blender and MIX it to delish heaven~



I really could have drank a gallon of this but alas that would not be great on my scale now would it?

I made this recipe tonight. Like melt in your mouth, totally curbs that craving for pizza and I honestly thought it was way better!! No sluggish ugh feeling afterwards like when you eat too much! The creator Tessa is quite brilliant. Thank you pinterest for this amazing find!!

Here is the recipe:
INGREDIENT NOTE:  To roast a spaghetti squash, halve the squash
lengthwise and scoop out the seeds.  Place face down on a parchment lined
cookie sheet.  Sprinkle 2-3 tablespoons water around the edges of the
squash and roast in a 375 degree oven for about 30-40 minutes.  DO NOT
OVER-BAKE!!  You want your noodles al-dente, not mushy!  Remove from
the oven, flip up, let cool, and then use a fork to pull the threads out!


Ingredients:



  • 1 pound grass-fed ground beef

  • 8 ounces chopped pepperoni, divided (we like Applegate Farms w/ no nitrates
    and dairy free)

  • 1 small onion, diced small

  • 4 cloves garlic, minced

  • 1 teaspoon sea salt (or more to taste)

  • 1 teaspoon EACH oregano, basil, and thyme

  • 4 cups roasted spaghetti squash noodles (apx, see cooking notes above)

  • 2 cups favorite spaghetti sauce – we use my Homemade Blender Pasta
    Sauce

  • 2 eggs

  • 1/2 cup Daiya mozzarella cheese or pecorino romano, and few tablespoons
    extra for sprinkling, optional

Method:



  1. Preheat oven to 400 degrees.

  2. In a large skillet over medium heat, saute the ground beef, 1/2 of the
    pepperoni, onion, and garlic.

  3. As the ground meat cooks, sprinkle in the seasonings.  Taste 
    (when cooked!) and add more to your liking if necessary.

  4. In a large bowl, mix the warm beef mixture, spaghetti sauce, squash threads,
    eggs, and cheese of choice.

  5. Place into a greased casserole dish ( I used a 9 X 9).

  6. Top with the remaining pepperoni and a sprinkling of cheese.

  7. Bake for 30 minutes, or until golden and bubbly.
